Carne asada

The Recipe

  • 2 lbs thin sliced steak
  • 6 cloves garlic
  • 1 orange, juiced
  • 3 limes, juiced
  • 3 tbsp maggi
  • 1 bunch cilantro
  • 4-5 dried ancho chiles
  • 1/2 yellow onion
  • 1/4 cup mirin
  • 2 tbsp brown sugar
  • 1 tbsp oregano
  • 1 tbsp cumin
  • 2 tbsp olive oil
  • 1 tbsp kosher salt
  • 1 tbsp black pepper

Roast chiles, onion, and garlic (best done while making salsa roja the day before) and add all to a blender.

Marinate steak overnight.

The Bullshit

Here's my ever-evolving carne asada recipe, so far so good. Most of the time you're gonna see recipes call for skirt or flank steak, which are very good, but peruse the meat department and try out some cheaper, thin-sliced cuts too. This marinade works great on those. Make your tacos as fancy as you want to be, or not to be.
