Grilled Honey Lemongrass Pork Tenderloin
The Recipe
The Meat:
2 lbs pork tenderloin, sliced in half lengthwise
The Marinade:
1/3 cup fish sauce
1/3 cup honey
2 stalks lemongrass, minced
2 cloves garlic, minced
1 shallot, minced
1 tbsp black pepper
Stir together all marinade ingredients.
Place pork tenderloin in a gallon ziplock bag, and pour over the marinade, marinating for 24 hours.
Remove from the marinade and coat all over with oil.
Grill on high, turning often, until you have nice char marks all around, then move to a medium low part of the grill and close the lid until internal temperature reaches 140 degrees.
Let rest for a bit and enjoy.
The Bullshit
Until now I've been making my fish sauce pork marinades all wrong. There's another one up on this site. This one is way better.
Serve this with some nuoc cham and you've got a nice easy summer weeknight dinner. I'm keeping it kinda light on the random bullshit here because, again, I'm pretty surprised how good this one turned out. Make this. Thanks.
