Italian Chop Pasta Salad

The Recipe

Vinaigrette

  • 4 tbsp olive oil

  • 3 tbsp red wine vinegar

  • 3 tbsp pepperoncini brine

  • 3 tbsp dijon mustard

  • Big pinch of salt

The Salad

  • 1 lb rotini pasta

  • 1 container cherry tomatoes

  • 6 oz salami

  • 4 oz provolone

  • 1 cup grated parmesan cheese

  • Big handful of basil

  • Red onion and pepperoncini to taste

Cook pasta per directions on box, and cut all ingredients into bite sized pieces (I like slices for the salami and provolone).

Mix ingredients for vinaigrette together, and combine everything in a bowl. Make more vinaigrette if the pasta salad is too dry.

The Bullshit

This one's like an Italian chop salad, but instead of lettuce it's pasta, so that makes it better. That's all.
