Snap Pea Salad with Fish Sauce Vinaigrette

The Recipe

  • 8 oz snap peas
  • Handful of mint leaves
  • 1 Thai chile (omit if you can't handle the heat)
  • Other hearty greens or sprouts you have laying around
  • Fish sauce vinaigrette

Clean and slice snap peas into thin strips at an angle, tear your mint leaves, slice your Thai chile thin if you're using it, and combine any other greens you have laying around in a bowl and toss with fish sauce vinaigrette.

The Bullshit

This salad is in heavy rotation this summer. It's pretty versatile, and it's been a great way for me to clean up any extra herbs and greens from the week. I've used pea shoots, mizuna, cilantro, spinach, all tasty. Everything comes together in just a few minutes as well (depending on how fast you can slice those peas).
