Miso Black Cod

The Recipe

  • 1.5–2 lbs black cod

  • 4 tbsp miso

  • 3 tbsp mirin

  • 2 tsp soy sauce

  • 2 tbsp sugar

  • Splash of canola oil

Cut the black cod into serving-size portions. Don't try to debone it, it’s way too much work, so leave the pin bones for now. Mix everything else together in a bowl.

Coat the fish in the marinade in whatever container you've got and let it sit for a few hours, up to overnight.

Lay the marinated fish on a foil-lined pan (foil for easier cleanup) and broil on high for 10–12 minutes, until the marinade goes a deep dark color and you're getting some black char on the edges.

Let it rest a few minutes, then pull out the pin bones.
