Roasted Corn Salad

The Recipe

  • 3 ears corn
  • 1 can black beans
  • 1 container cherry tomatoes
  • small bunch cilantro
  • 3–4 sprigs tarragon
  • fresh lime vinaigrette

Grill/roast/pan sear your corn, cut it off the cob.

Slice your cherry tomatoes into easy to bite pieces (I like to quarter or halve them).

Chop cilantro.

Rinse your beans.

Combine all with vinaigrette and mix in full tarragon leaves.

The Bullshit

This is my new summer salad, and it's a great mix of flavors. I literally just opened up the Flavor Bible (check it out, great book) and combined a bunch of stuff that goes with corn and made a salad out of it. Now I'm posting it on the internet. Enjoy.
